Learn how to make delicious Christmas Pizza Bites. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 package (about 13.8 oz) refrigerated pizza dough, or homemade if you’re feeling adventurous
  • 1 cup marinara sauce (store-bought or your favorite homemade version)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni slices, or chopped regular pepperoni
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning (or a mix of oregano, basil, and thyme)
  • 1 tablespoon olive oil, for brushing
  • Optional: chopped fresh basil or parsley for garnish
  • Optional substitutions: Use vegan cheese for a dairy-free version, turkey pepperoni for a leaner bite, or add diced bell peppers or mushrooms for extra veggie goodness

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
  2. Unroll the pizza dough onto a lightly floured surface. Using a rolling pin, gently roll it out to about ¼-inch thickness. Don’t worry about perfection—Mama Lu never was one for rigid edges.
  3. Cut the dough into small squares, roughly 2 inches by 2 inches. These will be the pockets that hold all the cozy, cheesy goodness.
  4. Place about a teaspoon of marinara sauce in the center of each square. Next, sprinkle mozzarella cheese and a few pepperoni slices over the sauce. Don’t be shy; these bites are meant to be generous.
  5. Fold each square over the filling to form a triangle or rectangle, pinching the edges firmly to seal. If the dough feels dry, brush a little water along the edges before sealing to help them stick together better.
  6. Arrange the bites on your prepared baking sheet. Brush the tops lightly with olive oil and sprinkle with Parmesan cheese and Italian seasoning for that classic flavor Mama Lu would recognize instantly.
  7. Bake for 12-15 minutes, or until the dough is golden brown and puffed, and the cheese inside is bubbling through in places.
  8. Let them cool for a few minutes before serving. If you’re feeling fancy, sprinkle with fresh chopped basil or parsley to add a burst of color and freshness.
  9. Serve warm, and watch how quickly these little pockets disappear—just like the stories and laughter that filled my childhood kitchen.
