Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon if using. This dry mix will give your pineapple balls a nice lift and just enough spice.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. This usually takes about 3 to 4 minutes with an electric mixer or a sturdy wooden spoon if you’re going old school like Mama Lu.
  4. Beat in the egg and vanilla extract until fully combined. At this point, your kitchen will start smelling like Christmas morning—it’s one of my favorite moments.
