  • 1 can diced tomatoes (14.5 ounces), drained
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cayenne pepper for a bit of heat
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and diced bell pepper, sautéing until they begin to soften, about 5 minutes.

  3. Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until browned and cooked through. Drain any excess fat if necessary.

  5. Add the rice to the skillet, stirring it into the beef and vegetables until well combined.
