  • 2 cups cooked quinoa or rice (brown rice works great for a nutty texture)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted and halved (optional but highly recommended)
  • 1/4 cup fresh parsley, chopped
  • For the sauce:
    • 1/2 cup Greek yogurt or plain yogurt
    • 1 small garlic clove, minced
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
    • Salt to taste

Substitutions: If you’re not a fan of beef, ground turkey or lamb make wonderful alternatives. For a dairy-free option, swap feta for avocado slices and use a tahini-based sauce instead of yogurt. And if quinoa isn’t in your pantry, couscous or even farro can give you that nice bite.

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon as it cooks.
  2. Once the beef starts to brown (about 5 minutes), sprinkle in the oregano, cumin, smoked paprika, garlic powder, salt, and pepper. Stir to combine and cook for another 3-4 minutes until the beef is cooked through and fragrant. Drain excess fat if needed.
  3. While the beef cooks, prepare your sauce by mixing Greek yogurt, minced garlic, lemon juice, dill, and a pinch of salt in a small bowl. Taste and adjust — Mama Lu always said, “A sauce should sing, not shout.”
