Learn how to make delicious ground beef healthy recipes. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 pound lean ground beef (90% lean or higher for less fat)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated or finely diced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, chopped (optional but adds great umami)
  • 1 cup fresh spinach, roughly chopped
  • 1 (14-ounce) can diced tomatoes, no salt added
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 2 teaspoons olive oil or avocado oil
  • Fresh parsley or cilantro for garnish (optional)

Substitution suggestions: If you don’t have fresh spinach, kale works beautifully here. You can swap out ground beef for ground turkey or chicken for a leaner option, but in my experience, the beef’s richness brings the dish home.

Instructions

  1. Heat a large skillet over medium heat and add the olive oil. Once shimmering, add the chopped onion and sauté until soft and translucent, about 3-4 minutes. This is where the aroma begins to fill the kitchen, reminding me of Sunday afternoons back home.
  2. Add the garlic and cook for another 30 seconds until fragrant. Be careful not to burn it — a quick stir is all you need.
  3. Increase the heat to medium-high and add the ground beef. Break it apart gently with your wooden spoon, letting it brown evenly. Cook until no pink remains, about 6-8 minutes. Drain any excess fat if necessary, but with lean beef, there usually isn’t much.
  4. Stir in the grated carrot, diced bell pepper, and mushrooms. Cook for 5 minutes, allowing the vegetables to soften and mingle with the beef’s rich flavor.
  5. Add the canned diced tomatoes, tomato paste, smoked paprika, oregano, and cumin. Stir well to combine and bring the mixture to a gentle simmer.
  6. Reduce heat to low, cover, and let it simmer for 10-15 minutes. This slow melding of flavors is something Mama Lu would have called “letting the love seep in.”
  7. Just before serving, stir in the fresh spinach and cook until wilted, about 2 minutes. Taste and adjust salt and pepper as needed.
  8. Garnish with fresh parsley or cilantro if desired. Serve warm and enjoy the comfort of a meal made with heart and history.
