12 Hawaiian sweet rolls (dinner roll size)
8 ounces sharp cheddar cheese, sliced thin (substitute with Monterey Jack or provolone for a milder flavor)
4 tablespoons unsalted butter, softened
2 tablespoons mayonnaise (optional, for extra creaminess and crisp)
1 teaspoon garlic powder (optional, adds a subtle savory touch)
1 teaspoon Dijon mustard (optional, brings a little tang)

Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Slice the Hawaiian rolls in half horizontally, keeping the top and bottom halves intact for each sandwich.
In a small bowl, combine the softened butter, mayonnaise (if using), garlic powder, and Dijon mustard. Stir until smooth and well blended.
Spread the butter mixture evenly on the cut sides of each roll. This not only adds flavor but helps create that golden crust Mama Lu’s skillet would get.
Layer cheddar slices on the bottom half of each roll. Don’t be shy — the cheese is the star here. Sprinkle a little black pepper over the cheese for a subtle kick.
Place the top half of the rolls back on, gently pressing down to sandwich the cheese.
Arrange the assembled mini sandwiches on the prepared baking sheet in a single layer.
