12 Hawaiian sweet rolls (standard size, like King’s Hawaiian)
1 pound ground turkey (preferably lean but not too dry)
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup mayonnaise (for a creamier slider, or Greek yogurt as a lighter substitute)
2 tablespoons Dijon mustard or yellow mustard (whichever you prefer)
1 tablespoon honey (to echo the sweetness of the rolls)
1 teaspoon smoked paprika (optional, for a little warmth)
Salt and freshly ground black pepper, to taste
4 slices sharp cheddar cheese, cut into quarters
1 cup baby spinach or mixed greens (optional, for a fresh crunch)
Butter, melted, for brushing tops of rolls
Optional: pickles or sliced tomatoes for added tang and freshness
Instructions
Preheat your oven to 350°F. Line a baking dish or sheet with foil for easy cleanup.
In a medium bowl, combine the ground turkey, finely chopped onion, minced garlic, smoked paprika, salt, and pepper. Use your hands to mix gently until everything is just combined — don’t overwork the meat or it can get tough.
Form the turkey mixture into small patties about the size of the Hawaiian rolls (roughly 2-3 inches in diameter). You should get about 12 patties.
Heat a skillet over medium heat and add a little oil or butter. Cook the patties for 4-5 minutes on each side until golden brown and cooked through (internal temperature around 165°F). Set aside on a plate.
While the patties cook, slice the Hawaiian rolls in half horizontally, keeping the tops and bottoms intact as a whole piece.
In a small bowl, mix together mayonnaise, Dijon mustard, and honey. Taste and adjust — this sauce is what brings the sliders together with a touch of sweetness and tang.
Place the bottom halves of the rolls into the prepared baking dish. Spread a thin layer of the sauce on each bottom roll.
Layer each bottom roll with a turkey patty, a quarter slice of cheddar cheese, and a handful of baby spinach or greens if you like the fresh crunch.
Spread a little more sauce on the top halves of the rolls, then place them over the assembled sliders.
Brush the tops of the rolls with melted butter to give them a golden, shiny finish once baked.
Cover the baking dish loosely with foil and bake for about 10-12 minutes, or until the cheese has melted and the rolls are warmed through.
Remove from the oven and let the sliders rest for a few minutes before slicing between each roll to serve.
