To make a classic Horchata and Agua Fresca, gather the following ingredients:

Horchata:

  • 1 cup long-grain white rice
  • 2 cinnamon sticks
  • 4 cups water
  • 1 cup almond milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Agua Fresca (Cucumber-Lime):

  • 1 large cucumber, peeled and diced
  • 1/2 cup fresh lime juice
  • 3 cups water
  • 1/4 cup honey or agave syrup
  • Fresh mint leaves for garnish (optional)

Substitute almond milk with regular milk for a creamier Horchata, and adjust the sweetness to your liking by adding more or less sugar or honey.

Instructions

Horchata:

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a blender, combine the rice, cinnamon sticks, and 2 cups of water. Blend until the rice is coarsely ground.
  3. Transfer the mixture to a large bowl and add the remaining 2 cups of water. Let it sit for at least 3 hours or overnight in the refrigerator.
  4. Strain the rice mixture through a fine-mesh sieve into a pitcher, discarding the solids.
  5. Stir in the almond milk, sugar, and vanilla extract until the sugar is dissolved.
  6. Chill for another hour before serving over ice.

Agua Fresca (Cucumber-Lime):

  1. In a blender, combine the diced cucumber, lime juice, water, and honey. Blend until smooth.
  2. Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible.
  3. Chill for at least 30 minutes before serving over ice, garnished with fresh mint leaves if using.
