1/2 teaspoon fine sea salt

Instructions
Start by sifting the flour onto a clean, flat surface, forming a mound. Create a well in the center just like Mama Lu would, wide enough to hold your eggs.
Crack the eggs into the well, add the sea salt and olive oil if using. With a fork, gently beat the eggs, gradually incorporating the flour from the inner edges of the well.
Once the mixture thickens and becomes less runny, begin kneading the dough with your hands. This step takes patience. Knead for about 10 minutes until the dough is smooth, elastic, and slightly tacky but not sticky. If it feels dry, add a teaspoon of water at a time.
Wrap the dough ball in plastic wrap and let it rest at room temperature for at least 30 minutes. This rest allows the gluten to relax, making rolling easier.
Lightly flour your work surface and divide the dough into four pieces. Roll out each piece into a thin sheet, about 1/16 inch thick. Remember, perfection isn’t the goal—each sheet should feel like a soft stretch of memories, not a factory product.
Once rolled, fold the sheet loosely and slice into your preferred pasta shape—tagliatelle, fettuccine, or even pappardelle. Unfold the strips and lay them out on a floured towel or a wooden board.
Bring a large pot of salted water to a boil. Fresh pasta cooks quickly—about 2 to 3 minutes. When the pasta floats to the top, it’s ready.
Drain the pasta gently and toss with your favorite sauce or a drizzle of browned butter and fresh herbs. Serve immediately and savor each bite.
