In a small bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and a pinch of salt. This dry mix holds the magic of those familiar fall flavors.
Add the pumpkin puree, milk, oil (or melted butter), and vanilla extract to the dry ingredients. Stir gently until you have a smooth batter. Don’t overmix — just enough to bring it together.
If you like, fold in a handful of chocolate chips or chopped pecans here. I remember Mama Lu sneaking pecans into her cornbread batter, and it always added that special crunch.
Pour the batter into your mug and smooth the top with a spoon.
