Substitutions: If you want a gluten-free version, substitute the flour with a 1-to-1 gluten-free baking blend. For dairy-free cheese, try a plant-based mozzarella. And if tomato sauce isn’t your thing, a simple olive oil and garlic base works beautifully, too.

Instructions

  1. In a small bowl, sprinkle the yeast over warm water and stir lightly. Let it sit for about 5-10 minutes until it becomes foamy. This waking-up phase always reminds me of how Mama Lu would tell me that yeast is “alive” and needs a little love to work its magic.
  2. In a large bowl, mix 2 1/2 cups flour, sugar, and salt. Make a well in the center and pour in the foamy yeast mixture along with 2 tablespoons of olive oil.
  3. Stir everything together until it starts to form a sticky dough. Then, turn it out onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. When I was a kid, kneading dough was one of my favorite chores — it felt like playing with a squishy, warm friend.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm spot for about 1 hour or until it doubles in size. I often set the bowl near the sunny kitchen window where Mama Lu said “the sun and patience make dough rise right.”
  5. Preheat your oven to 475°F (245°C). Punch down the dough and roll it out on a floured surface to about 12 inches in diameter. Place it on a baking sheet or pizza stone.

  7. Scatter the shredded mozzarella evenly, and if you like, add pepperoni or sausage slices.
  8. Brush the crust edges lightly with olive oil to give it that golden finish.
  9. Bake the pizza for 12-15 minutes, or until the crust is golden and the cheese bubbles and browns slightly. This is the moment I always watch for that telltale golden edge — it’s like the pizza’s way of saying it’s ready to be loved.
  10. Remove from the oven, sprinkle Parmesan cheese on top, and let it cool for a few minutes before slicing. Garnish with fresh basil if you have it on hand.
